I would like to thank Jean-Charles Rochoux for allowing me to have the three-week apprenticeship at his wonderful shop in Paris, France and to have the opportunity to work with him and Floren, who are both terrific chocolatiers. Also, I would like to thank Alexandre Guillaume and Chocolat Weiss for getting me the apprenticeship at Jean-Charles Rochoux's Chocolate Shop!

I want to express my gratitude to Chanterelle for giving me the one-year apprenticeship at their outstanding restaurant in New York City. Most of all I would like to thank Kate Zuckerman who is the head pastry chef at Chanterelle for allowing me to come in and learn an endless amount with her and have an amazing apprenticeship. Without her The Jakery would not be possible!

For a second time I would like to give a big thanks to my mentor Jerry who got me to where I am today and made me believe that I could start my own company.
Once again I would like to thank my older brother Peter and my little brother Taylor because they both always had faith in me, and my pastry skills!
